What you most need to know about apricots - a good, ripe apricot that is ready to eat will smell like an apricot. The apricot is a member of the rose family, and is related to plums, peaches, cherries and almonds. There are many varieties of apricots that range in color from pale yellow to burnt orange, but when selecting apricots, always look for fruits that are plump and heavy for their size with no trace of green. They should also be fairly firm, giving only a little, and have a delicate apricot-like aroma.
