Burdock root is most popularly seen pickled and typically goes well with rice or sushi. But in Japan, it’s an all-purpose vegetable that's added to stews, stir-fried, and pickled. You wouldn’t guess it from looking at it, but Burdock root is actually sweet and has both a crunchy and meaty texture.
