Celery root, also known as celeriac, is just what you’d think it is: the root of the celery plant. This root vegetable has a mild, celery-like flavor with a potato-like texture and the combination seems to delight the taste buds.
Look for celery roots that feel heavy for their size. Celery root is very difficult to peel so, if possible find ones that are as smooth as possible, although they never really get too smooth. When peeling, remove the entirety of the slightly hairy brown exterior and you’ll find a nice creamy, solid flesh inside. Celery root is often shredded and used in salads. It is also delicious added to soups and stews. Like all root vegetables, celery root can be roasted, braised or simmered.
