Chioggia beets are naturally striped – some have a yellow-and-orange combination while others come with a red-and-cream candy cane effect. Use them as you would other beets but be prepared that the beautiful striping often fades when cooked. Beet leaves are also edible and can be prepared in the same manner as Swiss chard. To store beets, trim the leaves 2 inches from the root as soon as you get them home. The leaves will sap the moisture from the beet root. But, do not trim the tail.
