Fingerling Potatoes

These finger-shaped or oblong potatoes are a welcome visual addition to any dish as they can be red, orange, purple or white skinned with a red orange, purple, yellow or white flesh - sometimes even streaked with veins of color. Pan-frying and roasting are a great way to showcase their wonderful nutty or buttery tastes. Fingerlings can also serve as a change-of-pace treat for a unique potato salad. Split fingerlings lengthwise and oven-roast to serve as an alternative fry.
