Garlic

Garlic is one of the most helpful and beneficial foods grown and has been used since ancient times to ward off illness. It is beneficial to almost every system in the body. When buying garlic look for heads that are firm with good dry, papery covering. Heads that are showing signs of sprouting are past their prime. Garlic that is very old will crumble under a gentle pressure from the fingers. A great way to peel garlic is to place the clove under the flat side of a chef's knife and gently press down with the ball of your hand, lightly crushing the clove. The skin will split, allowing you to pull it off the clove more easily.
