Green Cabbage

Green cabbage is a sturdy and durable vegetable - actually one of the long-lasting greens available. It’s most widely used in salads and slaws, but you can also stir-fry it, or long-cook it to bring out its true sweet nature. Look for heads that feel heavy for their size (which can get pretty large), with tightly packed, moist looking leaves. Cabbage is an excellent source of vitamins A, C and K, as well as being rich in iron.
