Porcini Mushrooms

The porcini is a rich, meaty mushroom with a strong nutty flavor. Not only do they taste good but are also very nutritious. This mushroom is known to have a high protein content, which makes them a great meat substitute for vegetarian dishes. If the undersides of the caps have a yellowish-brown hue to them, the mushrooms are close to being overripe, and if they have black spots on them or the undercaps are a dark green then they are, in fact, overripe.
