Yellow Bell Peppers

Yellow peppers can be used much like red or orange peppers. They are similarly sweet, but have a milder taste. Much like the red bells, they do well when roasted and keep their beautiful yellow color even when cooked. Their bright color and sweet flavor make them perfect for tossing into salads. They can be enjoyed either raw or cooked. Red bell peppers contain very high amounts of vitamin C and Vitamin A as well as significant amounts of vitamin B6 and dietary fiber.
